“Arroz con Pollo” Chicken and Rice

2 Chicken breast  or “Gardein’s Chick’n Scallopini” per guest.
2 or 3 cups of Rice (Yellow, White or Brown)
Onion Powder
Garlic Powder
Paprika
BBQ Sauce
BBQ Sauce w/Honey
Lemon Juice
Lime Juice
Simple Salt
Pam

There are several ways you can make this dish.  You can either cook in the oven or on a stove top or on the BBQ grill. We will show you all.

First thing you do is defrost your chicken in the refrigerator for at least 4 to 6 hours. Now remember if your friends are  vegetarians you can use “Gardein’s Chick’n Scallopini” in place of actual chicken. If you do and will be cooking on the stove then defrost that also, but only for an hour or two so it is easier to season it.

Second, you should make the rice just before you season your chicken. Just follow the directions on the package to make it. Then let the rice stand while you prepare the chicken.

You will need to wash your chicken before season then cook it. Again, not with soap, just plain water. Now, you need to season your chicken.  You can use whatever seasonings or sauces that are your favorites.  These are ours, Onion Powder, Garlic Powder, Paprika, Simple Salt, Lemon Juice, Lime Juice or BBQ Sauce.

For the Oven and Stove Top:

Use an aluminum pan for the oven or for the stop top use a Non-Stick Frying Pan. Spray Pam on which ever pan you use. Then place each chicken breast in the pan. Even if it is non-stick it can’t hurt to give it an extra little help. Pour a tablespoon of BBQ Sauce on each chicken breast to cover it. Then add a teaspoon of the Lemon and Lime Juice on the chicken. Then you add your dry powder seasonings (Simple Salt, Onion, Garlic or Paprika) on however spicy you like it. If you don’t want BBQ Sauce then you can just use the Lemon and Lime Juice and some of the dry seasoning. In the oven cook it at 350 degrees for at least 45 minutes depending on your oven or till the chicken looks done.

For the Grill:

Season your chicken breast ahead of time before you put it on the grill. Use the recipe above to season it.  Then place each chicken breast on the grill and cook for 20 to 30 minutes depending on your gill or till the chicken is done.

Now serve with the rice.  You should know that Minute Rice is Gluten Free so if you have friends who can’t have Gluten that this is perfect.
