Breakfast Casserole
2 cups shredded Cheddar cheese
2 cups shredded mozzarella cheese
2 tablespoons butter
a cup onions
½ cup chopped red bell pepper
2 cups diced fully cooked ham
8 eggs
1¾ cups milk
½ cup all-purpose flour
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
(1.) Preheat oven to 350 degrees F .
(2.) Combine Cheddar and mozzarella cheese in a small bowl
(3.) Place 3 cups cheese mixture into a 9x13-inch baking dish.
(4.) Melt butter in a large skillet over medium heat; cook vegetables till they are tender, about 5 minutes; drain.
(5.) Spread vegetables over cheese mixture.
(6.) Top veggie mixture with ham; sprinkle with remaining 1 cup cheese mixture.
(7.) Beat eggs in a bowl; mix in milk, flour, garlic and onion powder
(8.) Slowly pour egg mixture into baking dish.
(9.) Bake in preheated oven for 35 to 40 minutes.
(10.) Let stand 10 minutes before cutting.
To make this for Passover, leave out flour and use Matzo Meal. You will also have to leave out the ham. Just add more vegetables.
