Tomato Soup
Ingredients
2 Tablespoons Vegetable Oil
2 Onions, Chopped
½ Teaspoon Garlic Powder
½ Teaspoon Pepper
1 (28 Ounce) Can No Salt Added Stewed Tomatoes
3 Cups No-salt Added Vegetable Stock or 3 Cups No-salt Added Chicken Stock
¼ Cup No Salt Added Tomato Paste
Directions
(1.) Heat oil over medium heat in a soup pot.
(2.) Place onions and garlic in the soup pot and cook, stirring for 5 minutes.
(3.) Add tomatoes, vegetable or chicken stock, tomato paste and pepper to the soup pot.
(4.) Bring to a boil then reduce heat and simmer 15 minutes or until slightly thickened
(5.) Puree soup with an immersion blender or in an ordinary blender.
Note: To make this vegetarian use vegetable soup.
