Individual Pot Pies
Ingredients
1 tablespoon unsalted butter or unsalted margarine
1/4 cup chopped onion
Celery
1 pkg baby carrots
4 no salt added vegetable bouillon cubes
Garlic Powder
Onion Powder
4 cups of water
3/4 cup half-and-half
1 teaspoon of cornstarch dissolved in water
Pam
1 packages of Pillsbury Grand Biscuits (8 count each)
1 package of frozen broccoli florets
1 package of frozen cauliflower florets
Egg wash (1 egg beaten with a 1 tablespoon of water)
Directions
In a small saucepan over low heat, melt the butter or margarine. Add onion; cook until translucent. Add the celery , baby carrots and the 4 vegetable bouillon cubes . Next add the water about 4 cups or until water covers vegetables, which ever comes first. Add garlic and onion powder to taste. Stir to mix up the ingredients. Increase the heat at this point and bring to a boil. Cook until vegetables are tender.
After soup is done you will add the half and half stirring constantly so it doesn't burn. Then add the cornstarch and water mixture to thicken soup. Simmer for 10 minutes continuing to stir constantly. Then take off the heat.
Steam broccoli & cauliflower florets. I find out that if you cook them in the soup they fall apart and lose flavor. Add steamed veggies to soup just before you will add it to the pot pie.
Heat over to 350 degrees.
Next in 4 small individual pot pie tin pans spray each with Pam. Roll out biscuits to make a pie crust and covers. Place 4 of the flat biscuits at the bottom of pan.. Then evenly distribute soup mixture in each tin. Now cover with the other 4 biscuits. Now brush egg mixture (1 egg and 1 tablespoon water beaten) on top of the pie so it will have a brown crusty look. If you have leftover soup, that is okay, then save it for another time. Get yourself some small Tupperware containers and you can freeze the soup till you want to eat it.
Place in oven and cook for 30 minutes or until pies are brown.
