Potluck Dinner



Here are our suggestions for some foods that anyone can make from scratch. If your friends want to bring something but not sure what pass on these ideas.

These are our recipes that we have used.

Hot Artichoke Dip
1 can (14 oz.) artichoke hearts, drained and chopped
1 cup Miracle Whip salad dressing
1 cup (4 oz.) grated parmesan cheese
1 can (4 oz.) chopped green chilies, drained (optional)
1 garlic clove, minced

1.)  Heat oven to 350 degrees

2.)  Mix all ingredients

3.)  Spoon into 9-inch pie plate or shallow ovenproof dish

4.)  Bake 20 to 25 minutes or until lightly browned.  Sprinkle with sliced green onions and chopped tomatoes, if desired.

5.)  Serve with tortilla chips, crackers, or assorted cocktail bread slices.  French bread works well.

Makes 2 Cups.

Chicken Salad

This is an easy recipe.  You can buy a rotisserie chicken at the supermarket that is already cooked and then warm it up at home which is the best thing to do.  The other option is to roast 4 to 6 chicken breasts.  If you want to make a vegetarian version of this just use Gardein chick'n scallopini

1 store bought cooked rotisserie chicken diced, 4 to 6 chicken breasts diced or 1 package of Gardein chick'n scallopini
10 cups chopped celery
5 cups shredded carrots
½ to 1 cups mayonnaise
French fried onions to top (optional)

1.) Dice Chicken and chopped Celery.

2.) In a very large bowl, combine chicken, celery and carrots.

3.) In a bowl, combine mayonnaise to the chicken mixture and toss to coat.
4.) If you want you add some French Fried Onions on top for more crunch.

If you are having vegetarian guests then make sure to just have some plain pasta with some tomato sauce that doesn't have cheese in it.  If there will be people who can't have gluten then make sure to have some gluten free pasta and Barilla has that but use a can of tomatoes.

Lasagna
1 mox Lasagna Noodles
Pam® Original No-stick Cooking Spray
1 Lb. Lean Ground Beef
Onion Powder to taste
Garlic Powder to taste
1 Jar Tomato Sauce or Marinara Sauce
32 Oz. Ricotta Cheese
1/2 Cup Parmesan, Grated
16 Oz. Mozzarella, Thinly Sliced

1.) Preheat oven to 375 degrees F.

2.) Boil water to make the Lasagna Noodles.  Cook according to package.

3.) In a skillet spray it with pam.

4.) Place beef in skillet. Cook for 5 minutes or till brown, breaking up meat with a fork. Drain meat then place back in skillet.

5.) Add 1 cup of jar, onion and garlic powder. Simmer uncovered for 20 to 30 minutes, until thickened.  Take off of the stove when done.

6.) Slice the Mozzarella.

7.)  In a 9x12 inch aluminum baking dish spray with Pam.

8.) Arrange a single layer of noodles cover with 1 cup of the meat and sauce mixture.

9.) Spread 1 cup of the ricotta on the noodles.  Then  1/3 of mozzarella slices

10.) Arrange another layer of the noodles.

11.) Repeat steps 5, 6 & 7.

12.) Arrange final layer of noodles over sauce. Cover noodles with 1 cup of sauce, place remaining mozzarella over sauce. Sprinkle the Parmesan cheese on top.

13.) Bake for 30 minutes. Remove from oven. Let Lasagna rest 10 minutes before serving.
