GARLICKY MARINATED TOMATO CROSTINI
INGREDIENTS
¼ cup extra virgin olive oil
2 garlic cloves, smashed
8 oz. small yellow tomatoes, quartered
8 oz. cherry or grape tomatoes, quartered
⅛ tsp. red pepper flakes
Salt, to taste
1 small baguette, sliced
2 Tbsp. shredded, fresh basil, for garnish
DIRECTIONS
(1.) In a small skillet, warm the olive oil over medium heat. Add the garlic cloves and cook until the garlic is fragrant, about 5 minutes. Let stand 10 minutes to allow the garlic to continue to infuse the oil as it cools. Remove the garlic cloves.
(2.) Combine the yellow and red tomatoes in a bowl, and pour the garlic-infused oil over them. Add the red pepper flakes and season, to taste, with salt. Let stand on the counter 1–2 hours (or marinate in the refrigerator overnight).
Just before serving, toast baguette slices. Top with marinated tomatoes and garnish with basil. Serve immediately, refrigerating any leftovers.
