Most of the time Spring can be nice time of year especially if you are had a terrible weather during the winter months. Spring is when the sun starts to come out. The weather starts to get a little warmer. That means you can open your windows and let some fresh air in. Yes, you might still have rain but that will mean soon the flowers being to bloom. We just hope you take a little time and let some sun and fresh air into your life.
We have a recipe for you that we think it is good to eat this time of year. It is BBQ Chicken, Rice and Tomatoes. It is an easy meal to make on the stove. Here is the recipe:
BBQ Chicken, Rice and Stewed Tomatoes
INGREDIENTS
2 Chicken Breasts
Or 1 Package Gardein Barbecue Chick’n Wings
2 Cups Rice
2 Cups Water
1 Can Stewed Tomatoes No Salt added
Pam Cooking Spray
1 Tablespoon Margarine
4 Tablespoons BBQ Sauce (If you use the Gardein it come with a packet of BBQ Sauce)
Onion Powder
Garlic Powder
Lemon Juice
Lime Juice
DIRECTIONS
(1) Over a high heat on your stove, boil 2 cups of water in a sauce pan.
(2) Pour the 2 cups of rice in the boiling water. Then cover the saucepan tightly with the lid and take off of the stove. Let the rice in the covered saucepan stand for at least 30 minutes till the rice absorbs the water.
(3) Spray a frying with Pam and turn the heat on the stove medium.
(4) Place the 1 tablespoon of margarine in a frying pan.
(5) Place the chicken in frying pan.
(6) Sprinkle garlic and onion powder over the chicken.
(7) Cook chicken on one side for at least 10 minutes then flip to other side.
(8) Season the other side of the chicken then cook for another 10 minutes or till chicken is cooked.
(9) Take chicken out of the frying pan after it is fully cooked and place on a plate. (Note if you use the Gardein it is already in pieces and you don't have to remove it from the frying pan.)
(10) Place rice in frying pan.
(11) Place the stewed tomatoes over the rice and stir together.
(12) Slice chicken lengthwise and then put it back in frying pan on top of the rice and tomatoes.
(13) Add lemon juice, lime juice and BBQ Sauce over rice, tomatoes and some more seasoning if needed then stir it all together.
(14) Cook for another 10 minutes till it is warm.
